Bouncing Back?

Hey everyone! 23yo female here, finally getting back in the gym after health problems put me out for over a year ): apart from losing much of my muscle mass, my health condition is restricting me to what is essentially a paleo diet (no gluten, dairy, or soy). Stoked to finally be lifting again but I'm having a hard time putting together a meal plan with my newest restrictions - Greek yogurt and cottage cheese were my favorites! Looking to build muscle and lean out these love handles that have been creeping up while I couldn't lift. Any tips for building myself back up??
